Reference vocabulary for the honeys, bee products, and craft that make up the Riad Bio selection. Each term is defined in French, Arabic, and English.

Honeys & origins

Sidr honey: Monofloral honey produced from the blossoms of the wild jujube tree (Ziziphus). One of Morocco's rarest harvests — short autumn flowering, low yield per hive. Dark amber, intense aromatic profile, traditionally consumed for vitality and recovery. →
Thyme honey: Monofloral honey harvested from wild thyme in the Moroccan mountains. Light amber, intense herbaceous aroma, naturally rich in antiseptic compounds. Traditionally used for sore throat, cough, and digestive comfort. Crystallizes naturally over time. →
Eucalyptus honey: Monofloral honey with strong vegetal notes, harvested from Moroccan eucalyptus stands. Used in tradition for respiratory comfort during cold seasons. Robust profile, slight bitterness in finish, pairs well with herbal infusions. →
Orange blossom honey: Citrus blossom honey, harvested in spring from Moroccan citrus orchards (Souss region). Pale gold, delicate floral fragrance, the most accessible of the monofloral honeys. Ideal for breakfast, yogurt, and pastry. Slow, fine crystallization. →
Daghmous (Euphorbia) honey: Rare honey produced from the resinous euphorbia (Daghmous, الدغموس) of southern Morocco. Distinctive bitter-sweet profile with a characteristic peppery throat afterburn. Considered one of Morocco's most prized therapeutic honeys, traditionally used for digestive issues. →
Mountain herb honey: Polyfloral honey from the heights of the Moroccan Atlas, blending wild thyme, lavender, and rosemary. Complex floral-herbaceous aroma reflecting the altitude flora. Annual production limited by the seasonal transhumance of the hives in the mountains. →
Wildflower honey (polyfloral): Spring polyfloral honey, balanced and approachable. Harvested from mixed flowering of Moroccan fields. The everyday honey: gentle, golden, accessibly priced. Suited to children (over one year), breakfast, and beverages. →
Beldi (بلدي): Moroccan Arabic adjective meaning 'of the country', 'local', 'traditional'. Applied to honey, it signals non-industrial Moroccan production from local bee populations and ancestral apicultural practices — as opposed to imported or industrial honey.
Monofloral vs polyfloral: A monofloral honey comes from more than 50% of a single floral source (Sidr, Thyme, Orange Blossom…) and bears that flower's name. A polyfloral (or 'all-flowers') honey blends several sources. Monoflorals are rarer and more expensive; polyflorals more accessible and versatile.

Bee products

Propolis: Resinous substance collected by bees from tree buds and used to seal the hive. Naturally rich in flavonoids and caffeic acid, used as a natural antibacterial and antifungal. Consumed raw or in blends (see Khalta Rubaiya).
Royal jelly: Whitish secretion produced by worker bees to feed the queen — what gives her a lifespan 40 times longer than other bees. Rich in proteins, B vitamins, and 10-HDA acid. Used as a general tonic and support for cognitive and physical energy.
Fresh bee pollen: Small pellets gathered by bees from flowers and stored in the hive. A complete plant-protein source (22 amino acids), vitamins, minerals, and antioxidants. Supports digestion, energy, and gut flora balance.
Khalta Rubaiya (الخلطة الرباعية): 'Royal four-element blend' in Arabic — traditional Moroccan formula combining euphorbia honey, fresh pollen, raw propolis, and fresh royal jelly. One spoon a day supports immunity, vitality, and hormonal balance according to traditional use. →
Beeswax: Secretion produced by young bees to build hive comb. Used in artisanal cosmetics (balms, soaps), traditional candles, and cuisine to coat certain cheeses. A natural by-product of beekeeping.

Geography & terroir

Souss-Massa: Administrative region in southwestern Morocco, encompassing the Souss plain, the slopes of the Anti-Atlas, and the Agadir area. Riad Bio is based in Tanalt, in Chtouka-Aït Baha province. The region is famous for its argan tree, citrus, honey, and amlou.
Anti-Atlas: Mountain range in southern Morocco extending from the Atlantic to the desert. Semi-arid climate, unique biodiversity (endemic argan tree, euphorbias, wild thyme). Source of traditional apiculture and several rare Moroccan honeys, including Daghmous.
Moroccan Atlas: Mountain system comprising the High Atlas, the Middle Atlas, and the Anti-Atlas. Altitudes can exceed 4000 m. Cradle of Moroccan mountain apiculture, source of altitude honeys (thyme, lavender, rosemary, wild herbs) with complex aromas.

Practice & quality

Apiculture (beekeeping): Raising and care of bees to produce honey, propolis, royal jelly, and wax. In Morocco, apiculture combines ancestral practices (traditional reed or cork hives) and modern techniques. The best cooperatives respect seasonal transhumance with the floral cycles.
Crystallization: Natural phenomenon by which honey moves from liquid to grainy or pasty state. Often indicates a non-pasteurized honey. Speed varies with composition (orange blossom crystallizes slowly, eucalyptus quickly). Reversible by gentle warming under 40°C.
Raw honey: Honey not heated above 40°C and not pressure-filtered. Preserves natural enzymes (diastase, glucose oxidase), residual pollen, and aromatic richness. As opposed to industrial pasteurized honey, which keeps the sweetness but loses the biological activity.

Moroccan cuisine

Amlou: Traditional Berber paste from the Souss region made from roasted almonds, cold-pressed culinary argan oil, and Moroccan honey. Naturally rich in vitamin E and unsaturated fats. Eaten on bread, with fruit, or by the spoon. →
Argan: Tree endemic to southwestern Morocco (Argania spinosa) whose fruit yields oil for two uses: culinary (lightly toasted, for amlou and seasoning) and cosmetic (cold-pressed without toasting). Harvested mainly by women's cooperatives.
