عسل الزعتر البلدي
Wild Moroccan thyme — zaatar in local pharmacopeia — grows in dense tufts on the herbaceous plateaus of the Middle and Anti-Atlas. This is not the garden thyme of European herb gardens: it is a scrubland plant rooted in mineral terroir, with an essential-oil concentration far above its domesticated cousins. The honey that comes from it inherits that aromatic intensity directly. Our beldi thyme honey is monofloral: hives are placed at the exact moment zaatar enters bloom and pulled before any other plant takes over. This calendar discipline guarantees a pure aromatic profile, without multifloral dilution. The harvest is by hand, with no heating, no industrial filtration. Honey leaves the hive with its enzyme load intact — this is what distinguishes raw honey from processed honey. When you open the jar, the thyme aroma strikes immediately: bright herbaceous notes, a balsamic finish that lingers on the palate. Denser than floral honeys, it crystallizes quickly into a fine, almost creamy texture — the signature of mature honeys harvested at low water content. Day to day: a spoonful in a warm infusion, on country bread, or in a dressing for grilled white meats. Avoid direct cooking: above 40 °C the aromatic structure breaks down. Thyme has been recognized since antiquity for its antiseptic and expectorant properties. The honey that inherits them is traditionally used to soothe sore throats, support natural defenses through colder seasons and accompany convalescence. One of the most prescribed honeys in Moroccan traditional medicine, often paired with warm lemon juice at the first signs of winter discomfort.

Harvested on the plateaus where wild Moroccan thyme (zaatar) blooms in dense tufts, this honey carries a rare aromatic intensity: bright herbaceous notes, a lightly balsamic finish, a perfume that lingers long on the palate. Denser than floral honeys, it crystallizes quickly into a fine, almost creamy texture — the signature of its authenticity.
Thyme is known for its antiseptic and expectorant properties; the honey that carries its signature is traditionally used to soothe sore throats, support natural defenses through cooler seasons and accompany convalescence. One of the most widely used honeys in Moroccan traditional medicine, often paired with a little warm lemon juice.
A teaspoon in a warm infusion in the morning, on country bread spread with goat butter, or in a dressing for grilled white meats. It also pairs beautifully with aged cheeses. Avoid high-heat preparations above 40 °C: heat denatures its aromatic and medicinal properties.
Honey — including thyme honey — is not recommended for infants under twelve months because of a rare but serious risk of infant botulism. Past age one it becomes an excellent winter companion: a spoonful in the morning supports natural defenses. Consult your pediatrician for any therapeutic use.
Because it is harvested at full maturity and bottled raw — no pasteurization, no industrial filtration, no dilution. That natural density reflects low water content (the sign of a mature honey) and concentrated aromatic compounds. Honey that's too runny is often the result of an early harvest or industrial processing that thins it out.
A wildflower (multifloral) honey is a balanced, gentle, accessible blend. Our thyme honey is monofloral: the bees worked mainly thyme through the bloom window. The result is a much more precise, more intense aromatic profile — and a use that is both indulgent and functional, where wildflower stays first and foremost a table honey.

Properly raw honey, finally
I've lived between Morocco and Europe for years and most thyme honey sold abroad is industrial. This is the real thing — dense, fragrant, crystallizes naturally. Worth shipping if you can't find a local source.
