Une révélation
Je connaissais l'amlou et la knafa séparément. L'idée de les marier m'a intriguée — résultat exceptionnel. Le croquant de la knafa transforme complètement le goûter. Mes invités ne reconnaissent pas mais en redemandent.

أملو بالكنافة
Amlou with Knafa is a contemporary Riad Bio creation where the traditional Berber paste meets the fine filo dough vermicelli browned in clarified butter — the knafa of Levantine desserts. Two Mediterranean traditions, two ancient gestures, gathered in one jar for exceptional afternoon teas. Not a hybrid product by default: a constructed encounter, dosed, designed for palates that know both origins. The base amlou follows our "bel 3assal" recipe — roasted almonds from the Souss-Massa, culinary argan oil from women's cooperatives, Riad Bio wildflower honey. To this we add knafa: filo dough vermicelli hand-browned in clarified butter in our workshop, exactly as in a traditional knafa. Once folded into the amlou, they keep their texture for several weeks after opening, without softening. On the palate, a more indulgent, more festive creation than classic amlou. The knafa brings a melting crunch that transforms the experience — a textural contrast amlou alone doesn't offer. On warm bread, on msemen crêpes, or simply by the spoon, it's a product that asserts itself at large family tables, Ramadan evenings, and gift boxes where the goal is to surprise. Storage: two months at room temperature after opening, up to three months in the fridge (bring back to room temperature before serving). Contains gluten (filo dough), almonds (tree nut) and clarified butter (dairy). For a gluten-free version, see our Amlou bel 3assal. No colorants, no preservatives, no artificial flavorings — only identifiable ingredients, prepared by hand in small batches.

A contemporary Riad Bio creation where traditional Moroccan amlou meets knafa — those fine filo dough vermicelli, browned in clarified butter, the signature of Levantine desserts. The result is a more textured, more festive spread that marries two Mediterranean traditions. Designed for exceptional afternoon teas and special-occasion breakfasts.
On warm bread, on msemen crêpes, or simply by the spoon. A more indulgent creation than classic amlou: the knafa brings a melting crunch that transforms the tasting. Ideal at afternoon tea, around large family tables, or as a gift that surprises in the best way.
Yes — the filo vermicelli are browned in clarified butter before incorporation, exactly as in a traditional knafa. Once folded into the amlou, they keep their texture for several weeks after opening. No additional cooking needed: open, spread, taste.
Yes — the knafa is made from filo dough, which contains wheat. This product is not suitable for gluten-free diets. It also contains almonds (a tree nut) and clarified butter (a dairy product). To be avoided in case of allergy to any of these. For a gluten-free version, see our Amlou bel 3assal.
About two months at room temperature after opening. The fridge extends storage to three months at the cost of a firmer texture — bring back to room temperature before serving. A thin oily separation is normal (non-emulsified product) and folds back in with a stir.
Almonds from the Souss-Massa and the Anti-Atlas, culinary argan oil from women's cooperatives in the argan groves, knafa prepared by hand in our workshop, clarified butter and Riad Bio wildflower honey. No colorants, no preservatives, no artificial flavorings — only identifiable ingredients, sourced locally where possible.
